Apple Crunch

As fall begins to wind down into, I often find myself with a few extra apples. I usually go to an apple orchard at some point in the early fall, and decide to get a box or two of apples. But that also usually means that I have some apples that are starting to get a little bit soft 6-8 weeks later.

This recipe is a delicious way to use up a few apples and it’s a crowd pleaser if I’m having people over for dinner or a game night.

It is especially nice if you serve it warm, right from the oven, with a little vanilla ice cream on the side. I mean, just look at that.

That said, if you have leftovers, it’s also quite delicious chilled out of the fridge, just like any other fruit pie.

Apple Crunch

Ingredients

  • 5 large apples sliced
  • 2 cups sugar
  • 1 tablespoon cinnamon more or less to taste
  • 1 1/2 cups oatmeal
  • 1 1/2 cups flour
  • 1 1/2 cups firmly packed brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2/3 cup butter softened

Instructions

  • Combine sliced apples, sugar and cinnamon. Mix lightly.
    5 large apples, 2 cups sugar, 1 tablespoon cinnamon
  • Place in well-greased baking dish.
  • Mix together oatmeal, flour, brown sugar, vanilla, baking powder and salt. Work in butter to crumb topping.
    1 1/2 cups oatmeal, 1 1/2 cups flour, 1 1/2 cups firmly packed brown sugar, 1 teaspoon vanilla extract, 1 teaspoon baking powder, 1/2 teaspoon salt, 2/3 cup butter
  • Press lightly over the sliced apples and bake in 350° oven about one hour until apples are done and topping is golden brown.
