Mustard Glazed Pork Loin Roast

I have always enjoyed this recipe and often make it for special occasions – like this one I made for New Year’s Day, 2026.

It easily feeds a whole crowd of people with moist, delicious pork – essentially making a whole line of pork chops all at once. I also recommend making up a second batch of the glaze and drizzling it over the meat after slicing at service time. Just mix it in a completely separate bowl – you’ll be dipping into it with a pastry brush that’s touched raw meat, remember! My dad once made the mistake of just making a large batch of glaze and putting what was left in the fridge to use at meal time. That was not a fun Christmas, let me tell you.

Mustard Glazed Pork Loin Roast

Prep Time 15 minutes
Cook Time 1 hour

Ingredients

  • 1 tablespoon prepared mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon pepper
  • 1 pork loin

Instructions

  • Mix glaze ingredients together and pour over pork. Spread evenly with pastry brush.
  • Roast pork at 325°. Remove from the oven at an internal temperature of 160°.

Notes

A 2-5 pound roast will take 10-15 minutes per pound (the long narrow shape of the roast means it will cook more quickly than a thicker roast).
No onion powder? Use 1 teaspoon onion salt, omitting the plain salt and onion powder.
